Ginger Parkin
125g Plain whole wheat flour.
2 tea spoons baking powder.
2 tea spoons ground ginger.
125g medium oatmeal.
125g real brown sugar.
125g margarine.
1 big tablespoon molasses.
1 big tablespoon clear honey/golden syrup.
175ml milk.
Set oven to 180 degrees C / gas mark 4. (140 works better in hotter than normal fan oven.)
Grease tin.
Sift flour, baking powder and ginger into bowl.
Add oatmeal.
Put sugar, margarine and molasses and honey over gentle heat.
Cool until hand against pan.
Add to flour mixture with milk.
Mix well, put into oven.
Bake for 1 hour.
